The new restaurant in Biršton will create unexpected flavors from well-known products

Those who like to discover new flavors will soon be able to add another special place to the map of Lithuanian gastronomy - the restaurant "Harmony Birštonas" located in the very center of Birštonas.

His kitchen will be managed by chef Mantas Ružionis, who has gained work experience in restaurants in various European countries and considers himself a representative of modern European cuisine. The new restaurant will be part of a cozy boutique-style hotel. The opening ofthe Harmony Birštonas restaurant and hotel is planned for mid-July.

The head of Harmony Birštonas, Neringa Vaitkūnaitė-Lopetienė, says that Mantas Ružionis was chosen as chef because his experience speaks for itself.

"In this restaurant, the kitchen will not be set up behind closed doors - all dishes will be created in front of the eyes of the guests who ordered them. The chef of a restaurant operating on the principle of an open kitchen must be talented and able not only to create magic on the plate, but also a magical atmosphere in the restaurant. Mantas, who opened the doors of his first restaurant when he was only sixteen, today has long outgrown the chef's jacket. He is a creator of dishes with an exceptional taste, a careful time planner, a skilled team leader, who knows how to interest restaurant guests in the cooking process, to communicate with them in a warm and friendly manner, even when there are many orders and the kitchen is forced to spin quickly. You only understand how talented he is and what unexpected but memorable combinations he can create on a plate when you taste his dishes," says N. Vaitkūnaitė-Lopetienė.

M. Ružionis considers herself a representative of modern European cuisine, and she likes interpretations, so she frees the chef's hands for creativity and encourages him to improvise and interpret dishes in his own way. A sandwich with roasted portobello mushrooms, goat cheese, egg and basil dressing? Lamb roast served with potato scallions, pickled grapes, peas and mint cream? Marbled perch with fennel, lovage and chive oil? Or maybe a pineapple carpaccio flavored with coconut sorbet and red currants? No matter which of these or other dishes the restaurant's guests choose, they can be sure that they will be surprised by the undiscovered but harmonious flavors, although the ingredients themselves seem to be well known.

The cuisine of the Harmony Birštonas restaurant will be seasonal, and according to M. Ružionis, it also encourages the chef and his team not to stay in the comfort zone, to experiment and search for new flavors. In this way, the restaurant can be both competitive and interesting for guests. The success of the restaurant is also determined by the quality of the food, so they will be carefully selected.

"Vegetables, berries, herbs, meat from free-range animals and birds will reach our kitchen from a local farm located right here. This will ensure that their taste and texture have reached their peak quality. In addition, the dishes on the menu will change seasonally, so we are already pickling, marinating, fermenting, salting, drying and other ways to preserve summer-ripening vegetables, ripening fruits and sickly berries. We will use them to create dishes in winter and early spring, when fresh vegetables, fruits and berries will no longer be available. The seasonally changing menu will allow the guests who come here to go in search of new culinary experiences every time", promises chef M. Ružionis.

In the new restaurant, guests will be able to have a gourmet breakfast, find a variety of dishes suitable for lunch and enjoy an exquisite dinner. On weekends, it will serve brunch, and in the evenings it will host exclusive degustation dinners, themed and DJ nights. The number of seats in the restaurant will reach 70. Another 150 guests will be able to enjoy food or drinks on the spacious outdoor terrace.
